Pot Stickers with Soy Slaw Salad



for a super quick meal

(20 minutes to dinner):



Dumplings with Soy Slaw


Cook Pot Stickers:

1 package frozen chicken Pot Stickers (about 6-8 each)

Place the frozen pot stickers in a large fry pan on the stove with 2 Tbl corn or veg oil. Toss to coat and then lightly fry until somewhat golden and soften. Then wipe out oil in pan with a paper towel. Pour 1/2c water into pan and cover, let steam until cooked through, about 5 minutes.


Meanwhile prepare salad:

In a large bowl place fresh herbed lettuce greens and 1 cup broccolli cole slaw mix. Toss to coat with:

1/4 c wine vinegar
3 tsp sugar
2 tsp light soy sauce
hot sauce opptional
red pepper flakes opptional


To Serve:

Place greens on plate, top with warm pot stickers, top with roasted peanuts, top with extra sauce from bowl. Serve.


Very simple.

A "wild" salad

I got this one from Karen Rakestraw....and I make vats of it on a very regular basis!!

Cook (Lundberg is my favorite brand) wild rice as directed on package....however many servings you need. Usually takes about 45-50 minutes, so prepare early.

Saute: whatever your favorite veggies are. My faves are broccoli, asparagus, mushrooms. Drizzle some balsamic vinaigrette dressing over the top while sauteing, a little white wine can also be added.
If you like tomatoes, toss in a few grape tomatoes at the end, cover, and let them steam on top of the other veggies...adds a nice zest to the combination.

On a plate, tear fresh spinach leaves. Drizzle with more balsamic if you like. Top with warm rice and sauted veggies.

Garnish with nuts and grated parmesan.

Sometimes I will add chicken sausage, sauted tofu or salmon to the mix.

Yum, my mouth is watering...hope you like it. Other than the rice, its a quick and easy meal!!
